Abstract

Summary: The production and assimilation of acetate during the growth of Saccharomyces cerevisiae on glucose and ethanol have been studied. Acetate inhibits growth and causes decreased yields on both substrates. The usual respiratory quotient based policy for fed batch control cannot be used for highly acetate producing yeast because of compensation between O2 over-consumption (due to acetate) and CO2 over-production (due to ethanol) in case of glucose over-feeding.
