Abstract

The structure of the surface and the micropylar apparatus of intra follicular and ovulated oocytes from six sturgeon and one paddlefish species were studied. Likewise changes in these stuctures were examined after eggs were processed into caviar. The objective was to establish some criteria of caviar quality and to identify interspecific differences. The presence (Acipenser) or the absence (Huso) of a funnel on the micopyle allows the discrimination of these two genera. The oocyte diameter, the size of the micropylar fields (surface perforated by micropyles) and the ultrastructure and size of the external micropylar opening allows the discrimination of several species. The oocyte surface of all species investigated looks very similar. After caviar processing, changes in the oocyte envelopes occurred which makes it difficult to recognise structural differences between species.

<abstract lang="en">The structure of the surface and the micropylar apparatus of intra follicular and ovulated oocytes from six sturgeon and one paddlefish species were studied. Likewise changes in these stuctures were examined after eggs were processed into caviar. The objective was to establish some criteria of caviar quality and to identify interspecific differences. The presence (Acipenser) or the absence (Huso) of a funnel on the micopyle allows the discrimination of these two genera. The oocyte diameter, the size of the micropylar fields (surface perforated by micropyles) and the ultrastructure and size of the external micropylar opening allows the discrimination of several species. The oocyte surface of all species investigated looks very similar. After caviar processing, changes in the oocyte envelopes occurred which makes it difficult to recognise structural differences between species.</abstract>
