Abstract

Résumé: On a comparé le bilan alimentaire d'une population contrôle de non-sportifs (GC) et de sportifs (GS). Les résultats obtenus ont mis en évidence un apport énergétique moyen significativement plus élevé chez GS que chez GC correspondant au coût énergétique de l'entraînement. La valeur énergétique supérieure de la ration permet un apport plus important de protéines, de vitamines et de sels minéraux chez GS, sans permettre cependant d'éviter une probabilité de risque d'insuffisance d'apport relativement élevée pour les vitamines B1, B6, PP, C et E et pour le magnésium.
Summary: In order to evaluate the nutritional adaptation to compensate for changes in physical conditioning and training regimens, we conducted a dietary survey in a group of 55 young athletes and in a group of 20 sedentary controls. Subjects energy, macronutrients (protein, fat, carbohydrate), micronutrients (vitamin B1, B2, B6, PP, C, A, D and E) and minerals (phosphor, calcium, magnesium, iron) intake was calculated using a prospective method, the 7-day food record. The mean energy intake for the sedentary subjects was less than that of the athletes (P < 0.001). The difference in the average energy value of the diet between the two groups reflected the intensity of the physical activity programme of the young athletes. On a total intake basis, young athletes had significantly higher intakes of protein (P < 0.001), minerals (P < 0.001) and vitamin B1, B2 (P < 0.01), B6, PP (P < 0.05). Our results clearly show that the diet of the two populations studied deviates in major ways from the Dietary Goals (increased animal fat intake, decreased relative proportion of energy derived from complex carbohydrate) and thus leads to a high percentage of subjects with individual intakes below their own requirement for vitamin B1, B6, PP, C and E and for magnesium. Therefore, it is concluded that despite a precise adaptation of energy intake to energy expenditure, it seems advisable to diversify the diet to ensure a correct vitamin and mineral intake.
