Abstract
Alcoholic fermentations of starch hydrolysate by two different yeast strains, Saccharomyces cerevisiae(var. Vinal) and Saccharomyces oviformis(IMAP 383), have been studied in batch runs. In order to evaluate the different inhibition phenomena due to both substrate and product, a new kinetic equation is suggested.
