Abstract

Abstract: Various volatile metabolites (acetaldehyde, ethyl acetate, fusel alcohols) appearing during alcoholic batch and fed-batch fermentations of beet molasses were determined by gas chromatography. The chromatograph was coupled directly to the process by means of a gas-permeable membrane. This approach is of particular interest for the very volatile components.
