Abstract

Uronic acid oxidase was round to be widely distributed in plants and present at relatively high levels in tissues such as squash and citrus fruits. The enzyme was extracted from orange peel, one or the richest sources, and purified by a procedure involving gel filtration and ion-exchange chromatography. The enzyme is a flavoprotein with an Mr or 62×103 and a pH optimum or ca 8.5 It oxidized galacturonic acid to galactaric acid in the presence or 0, with the production or H2O2. It also oxidized oligogalacturonides and polygalacturonic acid, with the rate or oxidation increasing with the degree or polymerization or the substrate
